Pro Metabolic “Yolky” Coffee

Good morning & happy Monday! I’m sitting here after our morning milking {yes! Milking a cow!}, sipping my coffee and planning out my day for today. I’m absolutely loving my coffee these days, and so I thought I would share how I made it and my (very loose) recipe for it. Since I struggled to find a “yolky coffee” recipe anywhere not on instagram. 

The benefits of raw egg yolks are numerous! Full of vitamins, minerals, good fats and protein. I would only suggest a farm fresh egg for this. I always use an egg from the day before, and one that was clean straight from the coop, plus I still give it a quick rinse. 

Raw (or organic whole) milk is the complete food- protein, fats & carbs and a great way to start your day! 

I use raw, organic sugar, but I’ve also used coconut sugar with this. There is definitely conflicting studies on the pros & cons of (good) sugar, and I’ve noticed this do not affect my blood sugar. 

As someone who always love mochas and just recently came off of (yucky) creamers, I tend to like a more flavored coffee. A splash of vanilla would work, but I love the chocolate flavor. A dash of cocoa powder *may* work, but I feel it gives a powdery taste to my coffee. I use Hershey’s Simply 5 syrup to give it that slight mocha taste. 

So, here’s my actual recipe:

While your coffee is brewing or water boiling, in mug, combine 1 tsp-1tbsp organic sugar, (I add a squirt of chocolate syrup, around – 1 tsp) and egg yolk together with a fork well. Pour coffee, or if you use a pour over like me, pour the boiling water, and allow coffee to brew into your cup. With a small electric whisk, whisk the coffee & sugar yolk mixture well. 

In a small saucepan, warm milk just barely warm. I use our raw milk from our farm, but before that, I sourced it from a local friend. Froth it with a handheld frother and pour into mug. 

I tend to find that with the use of the egg yolk, it gives the coffee a very smooth, not bitter, creamy taste to the coffee. I’ve made this latte recipe omitting the egg yolk when I didn’t have one on the counter, and it just wasn’t as good. Not as creamy & smooth. It definitely gives both a taste & a health boost!
