In case you haven’t figured it out….we love muffins around here. Luke likes them because they’re more filling and have less sugar than cookies or other kinds of dessert. I like to make them because they’re quick, easy and not super messy! Today I want to share with you a recipe I made up with all our frozen blueberries. Blueberry Banana Muffins! Luke loved them, and I also took some to a family in the church. As far as I know….they liked them, too! 🙂
1 3/4 cups all-purpose flour
1/2 cup sugar
2 1/2 tsp. baking powder
3/4 tsp. salt
1 well beaten egg
3/4 cup milk
1/3 cup oil (I like using coconut oil!)
1 cup mashed bananas
1/2 to 1 cup blueberries
Directions:
Stir the first 4 ingredients until well combined, add the wet ingredients. Stir just until moistened. Fold in blueberries. Bake at 400 for 25-30 minutes.
Voila! Don’t those sound so good? We love them so much, I’ve made them twice this month!
