Blueberry Banana Muffins

In case you haven’t figured it out….we love muffins around here. Luke likes them because they’re more filling and have less sugar than cookies or other kinds of dessert. I like to make them because they’re quick, easy and not super messy! Today I want to share with you a recipe I made up with all our frozen blueberries. Blueberry Banana Muffins! Luke loved them, and I also took some to a family in the church. As far as I know….they liked them, too! πŸ™‚

Blueberry Banana Muffins


1 3/4 cups all-purpose flour

1/2 cup sugar

2 1/2 tsp. baking powder

3/4 tsp. salt

1 well beaten egg

3/4 cup milk

1/3 cup oil (I like using coconut oil!)

1 cup mashed bananas

1/2 to 1 cup blueberries

Directions:

Stir the first 4 ingredients until well combined, add the wet ingredients. Stir just until moistened. Fold in blueberries. Bake at 400 for 25-30 minutes.


Voila! Don’t those sound so good? We love them so much, I’ve made them twice this month!
